Product introduction
Xanthan gum, also known as Chinese crude gum, is a kind of microbial extracellular polysaccharide with a wide range of functions, which is produced by Xanthomnas campestris with carbohydrates as main raw materials (such as corn starch) through fermentation engineering. It has unique rheology, good water solubility, stability to heat and acid and alkali, and good compatibility with many kinds of salts. As thickener, suspending agent, emulsifier and stabilizer, it can be widely used in more than 20 industries such as food, petroleum and medicine, and it is the microbial polysaccharide with the largest production scale and extremely wide applications in the world at present.
It is light yellow to off white powder, soluble in water, insoluble in organic solvents. It can increase the viscosity and thickness of a liquid. Xanthan gum is stable in temperature between -4ºC and 80ºC, and pH values between 1.5 and 13. Its molecular formula is C8H14Cl2N2O2, and CAS number is 11138-66-2.

Usage
Xanthan gum can be used as thickening agent, stabilizer, suspending agent, co-emulsifier, coating agent and foams stabilizer.
